View Full Version : Smoked Woodford Reserve Pecan Pie - Bash Style! (w/ pr0n)

So for the North Texas Brethren Bash yesterday, I wanted to cook something different. A while back I posted up a thread asking for suggestions (http://www.bbq-brethren.com/forum/showthread.php?t=180448) and 16Adams suggested a chocolate bourbon pecan pie. I thought that sounded great but Tasha doesn't eat chocolate, so I decided on a regular ol' bourbon pecan pie.

I prepared the ingredients except the butter and eggs on Thursday night and sealed it up in a vacuum bag.

That little bag sat restfully until about 4pm yesterday. I rolled out a Pillsbury pie crust into a pie pan. This was a 3 person job in the 25-35 mph winds we were dealing with.

I stirred in a few eggs and a few TBSP of butter and viola!

Pecan pie ready to go on Colt!

We were smoking some briskets with pecan wood and threw the pie on the top shelf. I didn't get any shots of it in the cooker since we were already in and out of the cooker so much the briskets were having trouble finishing. But I got 10 other Brethren and their families to vouch for me :wink:

About 40 minutes later, this beauty came out!

This thing went fast and the pan was scraped clean!

Who Dat????You had posted a recipe with chocolate. I had found one online from Paula Deen's website w/o chocolate and last week cmcadams posted up that he makes a killer bourbon pecan pie. I asked for his recipe and he posted that link...

Oh and I had really been worried about this picking up a "greasy" flavor from the fat of the other meats in the cooker and even a bit worried about the pecan smoke being overpowering, but neither were detectable to me. I'll try this again and try to save a piece for the next day when my smoke "detectors" are a bit more reliable :wink:

I quickly realized I should have made 2 of these for the bash! :wink: My normal pie serving is about double of what I ate of this pie... :sad:

I got another pie crust though :wink: Maybe for Easter :becky:

That looks insane - I love pecan pie. Never been much of a baker, but I might have to try this...good reason to go buy a new bottle of bourbon, too...hmmm...

Looks great...very similar to what I know as Kentucky Derby Pie. Your photo made me wonder - would pecans absorb much if you marinated them in the bourbon for a bit, before mixing all the ingredients? Could give the pie a little extra punch.

Has anyone here ever tried that before?

There was plenty of punch left in it...and the pecans, bourbon, sugar, and syrup were in the vac bag together for ~2 days prior to baking.
