The Flat Iron (a.k.a.Top Blade) Steak is a super flavorful cut from the cow's shoulder, but the drawback is a ridiculously tough line of connective tissue that runs down the middle. Once removed this steak is perfect for the grill, tender as can be. If your butcher hasn't removed it for you, here is how I do it. To the real butchers out there, I apologize in advance...

Marinated and massaged.

Onto the Egg running at about 500 degrees. Seared both sides then shut down all the vents and continued cooking until the IT reached 125.

Rested for 15 minutes on the cutting board then sliced.

Because I've been on the Paleo (Caveman) Diet for the last couple of months, I served it with collard greens and Jicama Home Fries. Enjoy!

I love flat-iron steak. Really tender and flavorful, makes fantastic fajitas.
