View Full Version : Camarones Al Diabla, Scallops With Grilled Peppers, Cook In Progress

Well, it was Shawn's birthday yesterday and we asked what he wanted us to cook for him. Seafood! So. I had always wanted to make the Devil's shrimp and this proved to be the perfect opportunity. I found a simple recipe here: http://www.lacocinadeleslie.com/2009/06/camarones-la-diabla.html and modified it a little bit.

I cut up seven Romas, about a quarter sweet onion, a package of green onions, minced five cloves of garlic, and rehydrated three Arbol and two Guajillo chilis in two cups of water with the maters. Added a little salt, three chipotles with about a tablespoon of the adobo sauce, and a squirt of lime juice. Brought that to a boil while sauteeing the onions and garlic in the butter and olive oil. Added those to the peppers and maters and took off the heat to let sit for an hour when it was pureed in a blender. This went back into the pot on simmer and reduced to about two thirds.

I also sliced red, yellow, orange and green bell peppers and marinated in some olive oil and Cavender's Greek Seasoning. Couple bunches of asparagus were also marinated in some olive oil, a little salt and pepper and lemon juice.

The shrimp are marinating for a little in olive oil, lime juice and s&p.
The scallops will be brushed with olive oil and dusted with s&p and some lemon pepper. So, all fairly simple. Redhot is making some crab wonton cups (Cream cheese, lump crab, chopped green onion and bread crumbs to fill wontons pressed into mini muffin pans). Those will be done in the oven, but everything else is for the grill.

Thanks! Yes, it's a Nikon D5100. Using an 18~55 mm lens. Set to macro for most of these shots. Had to recharge the battery. So...

The rice we've become addicted to lately is Hinode brand whole grain black rice grown in Thailand. If you haven't tried it, you may want to. It comes in this packaging:

Slight setback. 15 minutes in the chimney and the lump has burned down to farking ash, what didn't fall through the grate of the ECB into it's ash pan (Yep, the ECB is my official chimney starting stand). Farking cheap Kroger lump. Apparently the ONLY big pieces in the bag happened to be the ones on the top of the chimney. The rest was mere shards. :tsk: Luckily I've got some Kingsford hickory briquettes.

Had to eat. Shawn loved it! Actually finished his plate, and had an extra wonton thingie too. I loved the Al Diablo sauce. Needed a touch of salt but that was it. Wound up dipping the scallops in the little leftover wonton cups filled with sauce.
Until today, I had only had the shrimp at El Palmar, the neighborhood Mexican Seafood place, which is one of my favorites. So, without further adieu, here are a few grill shots:

Wow. That's just outfarkingstanding Guerry! I can see those shrimps and scallops are PERFECTLY cooked. Great job, and I'm sure Shawn was very happy with what a great meal you cooked for him. :thumb:

Thanks for sharing. I've been eating 'Forbidden Rice' for the last three weeks. Trying to lose a few pounds. Substituted bread and potatoes with the purple rice. I think it's working. LOL.

Recipe for the wonton thingies if anyone has a mind to make them.

1 package wonton wrappers.

2 packages cream cheese (We used one regular and one Greek yogurt cream cheese) softened.

2 cans lump crab meat drained

1/2 cup seasoned bread crumbs

1/2 cup finely grated Romano

1/2 cup finely grated mozzarella

6 finely chopped green onions, white and green parts

extra mozzarella for topping

Preheat oven to 350. Mix ingredients. Spray mini muffin tins with oil and press in wonton wrappers. Fill cups about 2/3 full and sprinkle cheese on top. Bake on middle rack for about 10 minutes. Check them at 8 minutes to make sure the wontons aren't getting too browned. Cool for about 10 minutes and serve.

Makes about 35~40.
