9 1/2lb brisket rubbed with Montreal Seasoning, Durkee Steak Dust and cocoa powder, with chuck wagon beans cooked low and slow under the brisket.

8.5 lb packer with Shagdog beef rub...maybe throw a fatty and some boudin on as well.

Going out for anniversary dinner Saturday night, but will be doing 4 racks of spare ribs Sunday to take to the bar that night. A friend is going to be making some Spanish rice and beans to go with them...

That's my cooking patio. 10 months after the hailstorm the roofers began tear off. So I'm thinking Mexican food- out somewhere-every meal. Chile Rellanos. Naked one night, fried the next. Mondays, oh- I won't go into that. Maybe next weekend:mad2::mad2:

4 chicken quarters- thigh/leg
(and maybe some vegetables in a pan.)


My aim is to practice some more with my "modified" COS.
If I get my "scheisse" together I'll take some photographs.

I have also sourced a farm (third generation family) in Lower Austria that produces it's own lump charcoal of which we picked up 70kg yesterday.
But that is a thread on its own.

I plan on grilling some quail.
Not sure what Dorado fish is Phu, but would like to try it sometime.

It's MahiMahi, or Dolphin fish (not bottlenose dolphin mammal.)

I got some leftover corned beef, gonna pastrami like an EyeTie.

Country style ribs, mac and cheese and make a nice salad.
Batching it as wife got called out of town to help a family member. Just me, the dog and a pure white cat at least through the weekend.

Took some pork necks out of the freezer and one small hock. Gonna smoke them sometime with some rib end chops. Thinkin something funky with the neck bones, We'll see.

Maybe I used the wrong translation...gilt head bream would be a better translation.
I think it tastes like mackeral but a little lighter.

A local brethren is coming over with a Bandera he's selling me.

I'm cooking him up some all natural non-injected non-brined BBQ chicken rubbed down with SYD chicken rub. I'll cook it in my 18.5" WSM at 300F without diffuser. I have the chicken sitting in the trays in the fridge right now covered with plastic wrap--rubbed them down last night. One chicken will be glazed with Sweet Baby Ray's right at the end of the cook, and the other one will be just the rub (which tastes insanely good alone due to the sweetness & citric acid in the spicy rub).

Sides will include homemade coleslaw with both green and red cabbage, along with homemade skin on mashed potatoes w/ homemade chicken gravy from stock & fat I rendered from about 10 chicken backs last night.

Keeping it simple as I have limited cooking supplies out at the new place(haven't moved in yet- been working on remodeling) so it will be smoked chicken drummies and baked smashed potatoes on the side.

Gary I love pork neck bones, the meat is so rich and delicious! Lookin' forward to seeing what you do with them. :)

Phu thank you!! I had my first taste of mahi in Hawaii... just loved it. :-D

Now I just need to see which cooker gets the call. Found four Hormel pork tenders. One pkg garlic pepper the other peppercorn. Going to make Tacos Adobado (sp)tonight. Work 0600 tomorrow so light on adult beverages.
Smoke on brothers and sisters-smoke on.
