Did this 11 lb. packer today. This is half the flat and turned out ok. I need a choice brisket, this was select. As usual everyone one was happy but my worst critic, me. Beans came out great if not a bit hot. Wifes corn bread was killer and the beer icy cold.

BTW- did you take a bite out of the end of that flat? Not that there's anything wrong with that:wink:

I know what you mean about being your worst critic. I feel the same way.
I cooked a few "bad" briskets right after I got my pit about 8 months ago. They were so bad that family and friends told me so :-(
Ever since then, I still have a hard time being satisfied even when it comes out great and everyone raves over it.
PS: Great smoke ring!!

It is a shame you are so critical of your ow work. From where I sit, that is a great looking brisket.

Ya know I'm looking at that pic last night when I posted it and noticed the round missing section on the end and for the life of me can't say what happened there. I don't remember even noticing it last night.:cool:

After all this time I finally hit brisket nirvana yesterday. 13 hors in WSM and ~ 6 in cooler.

I don't know what looks better, the brisket or the Q-bana! Beautiful work on both!
