Step 1) Cut a coulotte into wide strips

Step 2) Apply a copious paste of EVOO, minced & mashed garlic, sea salt, and pepper

Step 3) Spin over a hot fire with plenty of wood chunks for smoke and flame. Make sure fat is dripping on flames and smell is carrying well on the wind for several blocks or more

Step 4) Disappear into house to eat it all up without sharing a morsel with neighbors

Picanha is considered one of the best cuts in Brazilian 'Churrascaria' type BBQ restaurants (there's quite a few in the US now, Fogo de Chao being the better known one I guess, which was bought by a US company a few years ago). Some traditionalists say it cannot weigh more than 1Kg (2.2lbs) or you are starting to get other cuts with it, and the tip is considered the best part.

Typically it's done over charcoal on a rotating spit, and carved from the spit in thin slices at the table. Sea Salt is the normal seasoning, but you also get garlic and sea-salt rubs quite often.

It's a nice cut of meat, but hellishly expensive here in Brazil - I've been far more excited about the other meats I have read about on this forum that no one in Brazil eats! Chuck, or 'acem' is considered good for dogs, and Brisket is unheard of here, and quite hard to get a butcher to keep in one piece.
