I prefer low and slow (better, more consistent results IMO), but I normally end up cooking hot and fast. It also depends on your definition of hot and fast. To me, 275+ is hot and fast.

This depends what the definition of hot and fast is.

I cook around 275 for butts, briskets and ribs.

I'm not sure if that is in the low and slow zone, or hot and fast. I think it's more "just right" than anything.

As for how I like to do my polling, I like to start low and slow, but always wind up finishing hot and fast for some reason.

Lack of control I guess.

Start at 225# for about two hours, then ramp up to 275# to finish.

Depends on the cooker since some prefer to run hotter than others.

Too bad you can't re make the poll because it needs to have the parameters of what is hot and fast and what's low and slow.

L&S is under 250* usually

H&F is usually over 275*

No idea what the in between is.

Hot N Fast for me. I used to be a low n slow but I yield way better results at higher temps. Here in there I will do low and slow though.

Low & slow(235-275) for brisket & pork..

Hot & fast(300-375) for yardbird..

550+ for burgers & steaks..

This is a great question for me that I am a beginner. I smoke usually at 225 F but I just understand that 250 F is much faster smoking way than the 25F difference can make believe with ribs

It all depends on the cut of meat and my time frame. I don't prefer one over the other. I do both L&S and H&F regularly.

Dead serious as of right now at home I do like to do both. On my offset I run hot and fast around 300+ and for my other smokers I'm still around 250.

I cook mostly around 275 which to me is kinda in between the two. If I had to chose one of the two it would be low and slow. Im not a big fan of hot and fast inless its chicken

Ya anywhere 'tween 325* and 450* with that Cabinet smoker :mrgreen: that's y the meat chamber door is so handy - to let heat out when temps shoot up. :oops:

ding ding ding! We officially have a winner! :clap2: That's the way i've always felt. Now my poor chickens are another matter entirely...they're cooking well into the 400's most of the time.
