Stopped at the market yesterday and picked up some local ingredients for a Throwdown. I chose some Rabbit to grind with some fresh pork chunks to make a Cheese Burger Hoppy Meal.

Butchered up and ready for some seasoning of Yardbird

Seasoned up and back into the freezer to chill prior to grinding

The global players are ready. Cheese from Holland and Chèvre Goat cheese made locally. Bacon from my new friend the butcher and fresh baked rolls I made the other day.

Fries are done and the bottom of the bun is complete with a lovely coating of the melted Chèvre goat cheese.

Are you getting your meats from a butcher or grocery and are they fresh or frozen? Just curious as to how it compares to here.

Fresh meats from several different Butchers. I am having a blast finding the best ones for different meats.

It's a Bosch brand mixer/slicer/grinder all in one. Good for small batches not really for large grinds in excess of 5 lbs or so!

What was the bun? It almost has the texture of an English muffin.

The bun was from a batch I made earlier in the week. Whole wheat flour, yeast, and salt. French bread dough but I didn't let it proof as long as I do for bread loaves.

Great looking food!Miss the frites dressing you could get over there.Friends stationed there now tell me it comes in different flavors now.Lived in Netherlands a lifetime ago(20+years) for 3 years.Enjoy.:-D

Lots of rabbit (Lapin) on the menu here. It's sold in every market. Very lean white meat and a clean non primal flavor. First time I had it was in Spain in Paella. Really nice.
