Hey yall. I put a shoulder that weighs about 10 lbs on the WSM at midnight and tried to get some sleep. When I got up at a out 6 thus morning my temps were at about 220. So by the time I got dressed and everything my pit was at 198. My IT was 181 on the meat ,so I added more fuel and got her back up to temp. However my meat IT dropped to 174 and seems to be stuck there. Is this normal or am I worrying for no reason?

That is normal when your pit temp drops. It will come back up. It might help to probe a new spot if you are using an in place thermo probe. Also, if you haven't wrapped you could wrap now. that will help pull it back out of the stall.

Falling apart? I'd say it was done, and from the looks of it, I need me some pork!
