This is my 1st Packer, 11lb choice, 1st try on the UDS, so here we go.

Seasoned with seasoned salt, black pepper, and a seasoning blend from
Costco

Started about 20 brickettes added to a bed of Mesquite lump, and a
couple of Hickory chunks.

DIY from a couple of cheapo drain cleaner snakes from Harbor Freight.

Same principle though.

They pull pretty evenly? How many cooks have you done with that cable vent?

Actually, I need to re-work it with heavier springs. I have to walk around it and check them when I make adjustments.

This is about the 5th or 6th cook on it.

Heh... Couldn't resist as I am fairly new to true smoking and I still tend to "take a peek" too often. Yesterday I did a good job of not looking for an hour. Pulled my chicken at 190*+ IT. :shock: Shoulda looked sooner. Juicy, tasty, but skin was toast...

Not bad.

To be honest, one of the better briskets I've seen come from California. I spent two years in SD and couldn't find one I liked for the life of me.
