Finally got around to uploading a few pics. Here are some St. Louis cut ribs from super bowl sunday smoked on my brother-in-laws BGE with hickory and apple. Left were cooked 3 hours at 275, foiled for 40 mins with habanero jelly/brown sugar/apple juice, then another couple beers length of time with a bastardized version of the Ique sauce glaze. The other rack was left on the same time just with no foil and no sauce. Both had plowboys rub. Both were excellent.

I did these a couple months ago. Some beef ribs(salt pep garlic) and smoked scotch eggs on my WSM. thanks for looking.
