View Full Version : Taking the MiniWSM for a test run

I have the day off work, and its nice weather, and the The mini is finished. Since I have not really done anything on the smoker in a long time. NOW is the perfect time.

For the maiden run I decide to to try a small pork roast. for a couple of reasons. Pulled pork is on of my favorites, and I am living by myself in a small travel trailer while away at work. So lack of room and mouths to feed means smaller cooks. It also allows for a smaller loss if I mess up my fire control on the maiden cook.

I load the fire basket up with Royal Oak lump, (I couldn't find any BB Lump when I bought this bag) and several chunks of Hickory mixed in and light one side of the basket with a propane torch

Here is the tasty test subject, A smallish pork shoulder roast dusted with my dry rub. waiting on the mini to come up to temp....

The pork went onto the grate fat cap down...

So far it seems to like running at about 300 to 325 this is where the temp stabilized with the top vent wide open and the bottom closed off about halfway.

After 3 hours it starting to look good...


The smoker is pretty tight no smoke leaking that I can see, the lid is tight, maybe a bit to tight. but it seals nicely. I have a feeling this is going to be cooking alot of good food in the future

Four hours in and the mini is holding temp very nicely, even recovers nicely after opening the lid to take a progress picture.

Can't wait to try some ribs on here

You'll love ribs on that brother! This is my favorite way now on the mini

I leave the membrane on and let it melt right off. They come out way way wet and moist. I do use the steamer diffuser though.

Really nice! How deep is your fire basket? I am thinking about making an insert for mine that goes up high into the tamale pan for extended cooks -- diffused with terra cotta above the basket.

it goes to just above the lip where the diffuser insert sits. I used the gutter screen from Home Depot that was mentioned in one of the build threads here

Time for a rest.. the bone has pulled clean. it is in a vented foil pan and wrapped in a towel. hopefully it taste as good as it looks

Time has flown by, hard to believe it was almost 2 years ago the MiniWSM was built.

Earlier this summer, a wind storm blew the smoker down the driveway a bit causing it to get banged up. a bit of massaging with a rubber mallet and it came back to semi round shape again. but it never did seal right, not like it did anyway.

back in October I moved back home after being away for work for almost 2 years. and that move did the Mini in for good.

Now anyone who has built and cooked on one of these can tell you how much it was missed. So having a spare pot, originally slated for a 2nd Mini, but it came in handy for boiling corn so it never had the bottom cut out, until now....

Presenting The newly reborn MiniWSM. this time it got a several coats of high temp black paint. and a new grate.. the rest of the hardware was saved from the original build. I still need to build a new charcoal basket. the old one has disintegrated.

SO far only some sausage has been cooked, but chicken thighs and a nice butt are in store soon. hungry for some pulled pork.
