alrighty, i tried searches for this, but not much was there.

any hints on how to cook 3 lbs (6 strips) of cross cut spares? wife likes em, so i thought i'd see what i could do with em.

i plan on cooking 6 chicken boobs and some fatties while i'm at it.

i also bought a small brisket flat, but i know i can find stuff on that in here. the only briskets i've cooked have been the whole thing.

I get "rib tips" here, they're essentially what you describe. I rub 'em just like ribs and cook them in a similar fashion, they just don't take as long. I usually don't wrap them, but have a time or two and they are quite good that way too. When I do wrap them I use a disposable aluminum pan with some sauce thinned with juice (apple). An hour or maybe 90 mins is usually long enough wrapped if you're going to put them back on the grates to firm up.
Very tasty eating, and a good way to try different rub, sauce combos too.

BTW-Brine those boobs!!

they're pretty small. i doubt it'll take them that long to cook....

Brine them, but don't brune them. Unless you really want to.......

They sound like Korean short ribs. I have a great marinade recipe that you just soak them in for a few hours and then grill them. I can send it to you if you're interested.
