It was supposed to get near 70 degrees today, so at last minute I picked up some ribs around noon today.
light sprinkle of kosher salt, then Dizzy Dust, then black pepper
Oak/Hickory wood
- cooked abour 250 range 3 hrs uncovered, 1 hr covered in butcher paper... very light glaze for 10 minutes then a final sprinkle of Swamp Venom
very good.

Well... occassionally, Phil let's us out of that space-aged moderator control room... just long enough to see if our pit skills are worthy enough to get the moderator contract renewed for another year.

I think the Swamp Venom gives it a nice kick but not "hot" or anything crazy...I think it compliments the Dizzy Dust well (along with the light layer of kosher salt).
I also took a tip from Butcher Bbq, and poured a tiny drop of water on the ribs prior to adding the salt and rub to "reydrate" the rub. Can't say I noticed a difference, but they were good so I would consider doing that again (if I remembered).
