Well I finally did my first spatchcock chicken and it was amazing! I hit it with some Yardbird rub and put it in the mini for about two hours at about 350 with some cherry chips and it was chicken nirvana. I did some ABT's on top, well sort of. The store was out of jalapenos so I had to use some red bell peppers. They came OK, but not the same, just a little less atomic. Still it was a great dinner with some friends. Keep Qin and brewin!
