Water Pan In A UDS

Somebody mentioned this in another thread and it got me thinking. I am starting a UDS build in the next couple of days. Do most people not use a water pan like in a WSM in their UDS?

What are the pros and cons?

I never have put a pan in mine I do use a diffuser. I like the rendering to hit the coals and smoke upward. I like to hear that sizzle.

I've done it and didn't really notice much difference. I do use a drip pan. I've had some issues, especially with brined chicken, where without the drip pan there was so much juice dripping it was putting out some pretty nasty smelling white smoke.

I got the pitch fork!! No There is no need for a water pan... your be surprised at how well the UDS cooks with out one... I' don't even use a diffuser. load it up with fuel, light it get the temp stable and load it with meat!!

If someone wants to put a water pan in a UDS.....don't insult the UDS get a WSM :-P

I do but then most of my Q comes out with soft mushy Bark and not much Taste........:mrgreen:

Been using only a UDS for 3 years. No never a water pan,no need-don't do it.IMO

I fill a couple of foil cake pans with lava rocks and cover those with HD foil and place those on the bottom rack. Helps to spread out the heat a little bit. On the other hand, I have cooked on my UDS without that, and loved the results. Depends on my mood, I guess. But I have never put water in the pans. I leave the water out of my WSM, too.
