I did a chuckie yesterday, and did my first Turkey on my new smoker today.

Brined overnight with just salt and a little brown sugar. Used a little butter under the skin. I didn't really use a rub this time. I wanted to try something different because of the salt in the brine I only used a little black pepper. I cooked at 275* for about 4.5 hrs with some maple and a couple chunks of hickory.

Looks good. I am going to be smoking Turkey and Prime Rib on the Assassin for Christmas dinner this year. Thanks for sharing.

Why run hotter next time? Skin not to you liking?
Try and leave the bird uncovered in the frig for a few hours before you cook it to dry it out. It worked for me, and running at 325*.
Just remember the hotter you run that, the less smoke flavor you will have.
