I am confident in my rib technique (http://www.bbq-brethren.com/forum/showthread.php?t=127404). I have had the same results 6 times now with the new method.
the only variables are how much apple wood to use.
I will now start playing with spare ribs instead of BBs so I will be ready if I find a rib competition to enter

I had some in-laws in town, so I slapped $50 of pork on the UDS

"Roxy's Rib Glaze" is awesome. If you heven't tried it, you should
1/3 cup honey
1/4 cup BBQ sauce
1/4 cup apple juice
1/8 cup cider vinegar
1/8 cup bourbon

baste the ribs every 15 minutes at end of cook for 4 to 5 layers of sweet glaze
