Have a12 lb bird that has been in brine for 12 hrs. Brine concentration is 1 1/2 cups of kosher salt to around 2 gallons if water. I do not want to over brine...should I takke out of brine and put in refrigerator?

Are you planning on cooking it today? I'd take it out, rinse and dry and then let it air dry in the fridge. That will give you better skin. An hour per pound is the recommended brine time.

If you followed the normal salt to water ratio, 1 cup of salt to 1 gallon of water, then you are fine. My turkey was in the brine for about 36 hours. It was just pulled for a few hours of drying time before hitting the smoker.

That is the same concentration as my brine and I find that 1 hr per pound to be more than enough.

Remove, rinse and dry in fridge.
