Just got my 30 gallon UDS together (have a separate thread for that) and BBQ'd my first meal on it: Spatchcock Chicken. (This is my first UDS I've made or used.)

Best chicken I've BBQ'd to date. (I've bbq'd it on my mini wsm, hasty bake, and weber kettle before this.)

I am IN LOVE with this UDS now. I think I'm gonna sell off the other three as this can do it all (smoke, grill, bake, rotisserie, and pbc-like cooking).

This photo doesn't do it that much justice because it was quick and dirty (on my iphone) vs. my dslr.

Sell the HastyBake and keep the others.......It's Almost Law here that one must have Multiple Cookers n Smokers. :biggrin1:

Ok I might keep my mini but I need to improve it. This 30 gallon UDS cooks much more consistently. I battle with temp control on the mini. I think I need to make a basket for the mini to keep the coal closer together and a bit taller.

But this 30 gallon UDS is really fuel efficient, really no more reason for me to use the mini.

I really think I am gonna sell all I have but the UDS, and make another UDS: a 55 gallon big brother. :) Have both convertible between grill and smoker.

I don't need the weber kettle because I can make a 55 gallon UDS and have it function as a grill when I want. Hrm.. lol.

Looks GREAT geek! You can't beat the flavor of a UDS and especially the smaller sizes like this. ....350 is absolutely perfect for chicken...did you go 325 -350? Did you use a diffuser?

obtw...you mentioned diffuser, here is mine. I cook with it in my mid size (30 gallon) 100 percent of the time.

Keep the Kettle and Mini sell the others (You'll Miss the Kettle!)- I not only Grill but smoke on my Kettle along with my UDS, My Converted Cabinet and my Electric Cabinet. In fact I hauled my Kettle to Work today and Grilled up 40 BrawtWursts.........

Everything looks great. How many inches up from the top of the charcoal basket is the diffuser .

I just got the kettle like less than 2 weeks ago--OTG 22.5 $60 brand new from flea market--and have only done a few cooks on it, so I won't miss it much. Actually found that it is very fuel inefficient, hard to control temp as well. Ash drops down over vent opening causing unpredictable temperatures. Didn't have that much fun with it the few cooks I've done with it.

Oh, very cool. What size is the pizza pan? 16 inches? Where did you get it? Is it aluminum or stainless steel?

Great looking cook!

What I will suggest is to keep your other cookers for a minimum 4-6months before you decide to sell them.

I built my UDS and used that all the time for 2-3 months straight. After that I went back to using my Performers (kettles) more than my UDS as it is just easier get setup. I still use my UDS but my go to cookers are my performers. I did end up giving one of my mini's to a buddy to get him into bbqing.

Nice job on the chix. Personally I'd keep the kettle in the arsenal, they're great versatile cookers. I agree with you on the mini WSM though- since I built my "junior" UDS I haven't used the mini once. It's just too affected by wind and cold temps whereas the UDS is virtually unaffected but cold and wind.
