View Full Version : My First Chuckie w/ Some Photos

BBQ'ing my first chuckie today. I BBQ'd it at around 290F in my Mini WSM to around 150F internal temp--smoked with Apple wood chunks.

After that, I placed it in my little Breville oven and roasted it--at 280F w/ convection off--on a broiler pan to around 170F. Then I took it out and threw it in my enameled cast iron Lodge brasier. I added a little water to the broiler pan and worked loose all the fond and put that into the brasier as well.

Cut up some onions and bell pepper and added them along with some stout beer.

It's now back in the oven with lid on and cooking. I'll pull it out at 200F internal temp / probe tender.

Oh my, a HEAVENLY aroma is filling the house. I've never BBQ'd a chuckie let alone with bell peppers, onions & stout--smells SOO good!

I just checked it; read 195F in the thickest part and isn't probe tender enough. One corner of the roast is thinner and it's perfectly probe tender. It has about 20 minutes to go.

Not sure what to serve it with. I am assuming I just leave the sauce alone; the peppers onion & beer is the sauce I guess. I won't thicken it with a roux.

Wish I had some french bread right about now to butter, garlic and broil right about now--but I drank too many stouts to go get some :) I think I'll just make up some mashed potatoes and perhaps add a little roux to a portion of the au jus for gravy for the taters.
