Do you think I can smoke two twelve pound turkeys on a signal grill, and how long at 275?

Yes you can if you especially have a domed lid. I usually smoke for a few hours then ramp up the temp to finish and crisp the skin some. Usually done around four hours.

I've done a lot of turkeys in my old Pre UDS barrel cooker, and if I when I do it this year, I will run my barrel wide open. I set it on rack, in a pan, with aromatics and some broth, white wine or whatever liquid of your choice. Bast it now and then with the drippings. turns out good.

Light off a full basket, as it gets rolling, just let it go. You won't be sorry. Moist, flavorful, and the gravy from the drippings? AWESOME!
