View Full Version : Stuffed Pork Chops

This was actually last night's dinner but I'm a little behind in posting since we were getting ready for a competition this weekend.

I started with a couple of bone in loin chops from a local meat market. I made a slit in them down to the bone to make a pocket for the stuffing. For the stuffing I used a bag of dry corn bread stuffing mix from the grocery store but used veggie stock instead of the water and added some finely diced apples. I let some of the stuffing cool and stuffed it into the chops.

I brushed the outside of the chops with olive oil and dusted them with some Big Bob Gibson rub that I had laying around and tossed them onto the Saber grill for 5 minutes on a side direct to sear and then let them finish indirect until the stuffing was 145 degrees. The pork we above where I normally like it but I didn't want the stuffing to be cool.

We served them with the rest of the stuffing and some baby green beans from Trader Joe's.

The chops came out good. the meat wasn't too dry. I think the stuffing helped keep it moist. The Big Bob Gibson's rub had a nice flavor with a little heat.
