The local conservation club had a dine and dance this weekend, and since I am a director at the club I decided no more fried chicken dinner, time to fire up the pit that my dad and his brothers built when he was President of the club.
We cleaned and brined the chicken using a simple salt and sugar brine on Friday after work. Then on Saturday we fired up the pit and got the grates cleaned around 11. We seasoned the chickens with Famous Daves and it went on around one. Finished it up around 3:30, and it was delicious.



For those who cook on open pits, racks like ours are very handy for flipping chicken, the empty rack on the end is place over the rack with chicken on it and then two guys can flip the whole rack at once.

Now that's some great looking chicken there! Beautiful golden brown and looks delicious. No need to be sorry, who needs sauce?

I'm not really sure what kind of bricks they are for sure, I think they are the ones used to line fire places in houses. I was only about 5 or 6 when the pit was built. It was hardly used anymore, mainly to burn trash much to my dad and my disgust, but we're going to change that.

Looks great. Something about the flavor of chicken cooked on those pits, can't be duplicated.
