View Full Version : Alice Springs Chicken w/ Mac N' Cheese.

Sometime last week I whipped up some Alice Springs Chicken and Mac N' Cheese. Never had this chicken stuff at whatever restaurant has it on the menu. It's a favorite of my wife, and she has been my judge on if it compares. She says it's better than what they serve, and I'm a fan of it, so it's a keeper now. Whipped up some Mac N' Cheese because I wanted to try making up some bow tie pasta, and while tedious, it was sort of fun at the same time.

Didn't take any pictures of the chicken being made up, but it consists of some boneless, skinless chicken breasts that I hammered down to about 1/2" in thickness. Hit it with some seasoned salt, and then I make some bacon which I crumble, some chopped up mushrooms, some re-hydrated onion flakes, some shredded Colby Jack, and a homemade honey mustard.

Cheese sauce is made with some sharp cheddar, some pepper jack, some milk, butter, salt, and pepper. Didn't need to any any thickening agent, came out plenty thick all on its own. Thanks for looking.

Yeah, having never tried it from Outback (My wife just got home from work, and she confirmed what it was.) I can't compare between the two, but this is definitely something I plan on adding into the usual dinner recipes. Very delicious, and I freaking LOVE mushrooms.

I can assure it was! The bow tie pasta worked really well for the Mac N' Cheese also. Think the next time I make it I'm going to enlist the boys into bow tie shaping duty just to speed things up, but I like it a lot better than making it out of some Linguine noodles.

Did you cook on the grill/smoker or just in the oven?

Did it in the oven. My wife is the opposite of a BBQ fan. I think I really got her tired of it because I smoked and grilled everything I could for the first two years I got my cookers. Since it's one of her favorite foods I just make it up in the oven per her request.
