Dueling ribs and rubs today. 1/2 Jamaican Jerk and half Jack Stack Meat and Poultry i wanted to try out. It's 50's and raining so we're going under cover today.

Jack Stack on the top and Jerk on the bottom.

Just fired up the Guru but set it for 250 and holding steady so i can stay warm inside and watch the Colts.

3 hours in and almost done... pulling about the 4 hour mark, all nekkid ribs

Hey, thanks to your team for taking one out of the Sea Chickens. 49ers fans appreciate it.

Looking fwd to hearing how you like the Jerk on the ribs. Did you use a dry seasoning or a sauce?

The Colts had a couple good wins...49ers and now the SeaHawks, Andrew Luck is playing out of his mind.

No I've been doing my ribs with just a dry rub no sauce. Olive oil pre rub really keeps them moist. I have to order some more Island Spice Jamaican Jerk...It's the bomb on chicken, pork chops and of course ribs.

I'm a big fan of jerk seasoning. I use it almost exclusively on pork but I make my own. Might have to try that Island Spice brand. Got a link?

Their website you can order 32 oz bottles. I'm going to order their All-Purpose as well. They're all pimento based.

Went 4 1/2 hours..absolutely perfect

I don't ever let it get in the way either.
But it is October......so I think we both know this is just the beginning of the count down to spring :laugh:

I always love seeing your mini at work! Jeff my UDS or other smokers get no love anymore...LOL If i can fit it on the mini that's where it's going. Hope the mid range mini i'm making works out. If my parts come in the mail and the pot fits then next weekend they'll be a new family member!

The only smokes i use it for is ones that i don't want any fluctuation and i'm doing something important like watching college football or NFL. Yesterday was rainy, windy and cold and it sure makes it convenient. I originally got the PQ for my regular Kettle but i rarely use the kettle these days.
