View Full Version : Smoked Duck on the drum..

I have to admit, the only reason I smoke duck anymore is for the leftovers to make gumbo. :)

I slathered the duck (domestic) in butter, seasoned with coarse salt and cracked black pepper.

Into the BPS drum at 300F with some apple and olive wood...
Saved the drippings for the gumbo.

Had smoked duck for supper that night then made gumbo the next day.

while the gumbo simmered I made smoked duck skin cracklins

But you took it over the top with the duck gumbo!

Did you smoke it for a certain length or a certain IT?

Cowgirl....I as well love opening your threads!!!! I, if you can't tell by my signature, am an avid waterfowl hunter. I LOVE DUCK!! I hardly ever pick them as its time consuming when cleaning several at once? But I'm going to do this with some this year for sure!! I love a duck breast on the grill treated like a fine rib eye though! Nice work!!! I too love gumbo on a Sunday afternoon by the wood stove watching football!

Looking good. Haven't had gumbo in forever. Gonna have to make some up. Might check out 99 Ranch for some duck, never had duck gumbo. Usually always seafood around here, or pork.

Thank you BBQDaddio! Duck fat fries sound tasty! The fat rendered pretty well, I didn't prick the skin on this one though. I used the breasts for the gumbo and ate one leg for supper the first night. The drippings are like liquid gold. lol

I had a whole duck in my hands Friday at the Asian market and put it back. Now I gotta drive back across town and go get it! I use the dripping from the duck and flour to make my reaux is that what you meant by saving it for later? I gotta order some Tasso too I always add it to duck gumbo...
