I trim off any extra thick parts. Otherwise I don't bother.

I like to trim it off and either make cracklins or save for sausage. More bark on the butt that way

I leave it on when cooking and then remove it when I pan the butt.

If I cook in the drum I leave it on, if I'm using the offset I trim a lot.

I trim it off at all times. I'd rather deal with before I cook it, instead of while I'm pulling it. I like the extra bark you get from doing so and I don't think it needs it for moisture.

I trim mine off. Smoke can only penetrate a certain amount, so I want it to penetrate meat that I will eat, not fat that I won't.

Before I would take it all off for low & slow. Now I leave a little on the bottom so it doesn't stick to the grate when cooking hot & fast.

I like FAT!!! :wacko: So I leave it on....course when I pull it the Wife MAKES me toss the fat.....something about a Cardiologist, or some such chit! :mrgreen:
I am able to get a sneak bite or two. :heh:
