I don't want to get too far ahead of myself as deer season in the areas I hunt is still a way off but......

Has anyone ever smoked venison ribs? A shoulder?

My brother has done it a couple of times with whitetail, if I remember correctly there wasn't a lot of meat on the bones (ribs) to make the cook worth while. I will ask him.

A friend gave me a couple of the hind quarters to do up. came out pretty good too. I marinated them in a store bought product for wild meats, forget the name though. Salt and pepper rub and cooked indirect at 325°or so on the kettle. Once the internal temp was 125°, seared both sides for a couple minutes. Oh yeah, while it was indirect, there was some bacon draped over the top.

I smoke deer loins just like Heavy D does his hind quarters and there Awsome too

Check out the recipe Big Bob Gibson has on Vension with White BBQ Sauce. It is very good.

Smoking those spare ribs from a deer is simpler than butchering the meat off to grind. I always foil after I have added a bit of smoke. They are lean and will dry out instead of turning tender. Although I remember making jerky once many moons ago. It was unintentional..

I smoke the ribs but use them in soup or beans after.....very little meat. I grind my shoulders for sausage and smoke the hind quarters or cut into steaks. Sometimes there will be some jerky get run through the smoker also. Bambi is always a welcome sight around here.....
