View Full Version : Forgive me Brethren, for I have sinned...

Had some Baby Backs and I was planning on firing up my UDS to break it in but my charcoal basket wasnt done yet. I figured I would fire up my offset and throw some olive wood in there, use my sweet onion rub and finish them up with a sticky sweet glaze... BUT THEN, My Wife who I Love very much, asked if I would do them the way I did back when we were in our crappy little apartment that wouldnt even allow a gas grill. So I caved and braised them in a blend of homemade BBQ sauce and Pepsi, covered and in the oven for a few hours. Finished them uncovered with some sweet onion dry rub and a layer of sauce. Threw them under the broiler just to caramelize them up a touch. They were tasty, but they were SMOKELESS!!!

So do any of you ever do ribs anywhere besides the BBQ/Smoker???
And please keep in mind, I did it out of Love!!!

You are forgiven, Brother Jayblefty. Now go make us fatties and ABTs and post pictures in penance.

As long as you didn't boil them first:wink:

Everyone else seems to steam ribs in foil with liquid these days, so I think you did just fine.

I undersand your wife completely. There are memories attached to food. I think it was nice of you to indulge her on this.

I see no sin brother. You had raw meat and you turned it into cooked meat and you and your wife had a delicious meal. The Brethren is a group of like minded folks who enjoy doing a lot of things the same way, but the Brethren is also extremely tolerant and caring. So you and your wife had ribs that weren't slow smoked using a woodfire, so what.

You have to keep the wife happy, heaven only knows.

It's only a sin if you try to pass braised ribs off as bbq ribs. :thumb:

I thought you were going to say you used matchlight or something.

What is this "sweet onion dry rub" of which you speak????

Sounds pretty good.... so we're gonna need a recipe if you want forgiveness.

Your wife asked a favor, you obliged. You should ask a favor too, just to keep Karma,Yin and Yang balanced. One of those when Jupiter aligns with Mars or more exactly Steely Dan''s 35 sweet goodbyes.

Not only is it all good, it's all normal. She had a request, you knew how to handle it. Holy Matrimony at its finest.

Smoke On and Amen.

It sounds like his wife is a member here. :heh:

Like others said, sometimes you've gotta do what you've gotta do.

My wife likes pork, but doesn't care for the smoke taste/smell. So, I've learned to make the occasional pork loin on the gas grill.

AS long as you don't call it bbq, there's nothing wrong with cooking in the oven.

A funny thing happened on the way to smoke some ribs.......hey brother.... Shiite Muslim happens......

On my dad's offset (which is even worse than the average offset) I'll sometimes do the "2" of my 3-2-1 in the oven. His has a bad habit of leaking lots of air and burning up coals too fast, so I put the meat further away from the firebox during the 3, transfer to the oven in foil for 2 and use that time to burn out the old coals, clean up the grill and reset for the 1 where I get the meat back in the smoke.

That's just my own little work around, I'm not proud of it but as was noted, in some situations "You've got to do what you've got to do"

C'est la vie, it's true

I have yet to do ribs on the WSM. My wife doesn't really like smoke so she bitches everytime I cook something on there. I usually buy St. Louis ribs, rub them, foil them and put them in the oven at 275 for about 2hrs. I pull for a half hour then onto the gas grille after I add Sweet Baby Rays. I get a good char on them and it makes her happy, lol.

There's an old saying... "If mama's not happy then nobody is happy" so you did what you had to do to keep mama happy... smart move :thumb:

The General gave orders and you followed them.

I see nothing wrong with that.

I'm curious about the olive wood you planned to use. What kind of smoke flavor does that produce?

It gives a nice sweet mellow smoke. I really like it. I have done some short cooks with it but nothing over 2 hours. I am hoping to do some butts this weekend to get a nice bark and smoke ring with it.

If momma aint happy, nobody happy. When I first met my wife, she told me "come to dinner, we are havin ribs" so i was like damn, i need to marry her. I came over just in time to see her pulling them out of a glass pan out of the oven, with nothing on them but worchestershire sauce. Geez. Lucky i still married her. ;) ha ha. just kidding wife,,, if you're watching...

At least you didn't boil them.
