1) does anyone monitor chamber humidity and if so how and is there a standard?
2) would an hour out of foil at the end of a shoulder cook benifit the bark similar to the last hour of a rib cook?
3)anyone use the charcoal bag instead of newspaper to light the charcoal?

1 - no idea
2 - yes, but I usually don't find it neccessary
3 - yes as long as it's not coated paper. Kingsford is fine.

2. It would firm it up. I've done it to brisket.
3. Did you see Alton's show on Tuna? He put a couple of squirts of canola oil onto the newspaper under the chimney, claimed it acted like a wick and would burn for 8 or 10 minutes.

3. I did it once when I did not have newspaper on hand, and only a little Charcoal.

We better be careful - Too many of those peppers doing the Mexican Hat Dance in synchronization could throw off the dynamic harmonic balance of our orbital plane and thrust us into another ice age or speed global warming, which would truly be farked.

I saw that about a year or so ago and I have been doing it ever since. It works! I start a whole chimney with two sheets of newspaper and never have to add more.

And I have cooked tuna steaks over the chimney also. Good chit!
