Fish tacos tonight...
Here's how we did it. We cheated a little and used this.

1 cup of Mayo, 1/2 cup sour cream, juice of 1 lime, juice of a 8 0z can of chipotle. Mix together and enjoy. Don't use the chipotle peppers. Use them for something else.
