I was going to try my first brisket in years tomorrow( my 2 attempts years ago were failures:oops:) but I felt confident enough after reading all the threads on here to get back on the horse! I decided after trimming it I was going to inject and let it set over night and get smoking at 8 am. My grandmother just called and said a friend of hers got sick and we need to go pick all of her green beans in the morning. I'm worried that the injection will ruin the meat and make it soggy and start to break down while I'm busy canning half runners tomorrow. Is 36 hours to long to sit? I ask because all the threads on here I've seen just say to let it sit over night.

Guess it would depend what you injected with. If just plain beef broth I would think you would be ok

I inject with a beef broth/stock injection & let it sit overnight frequently. Never had a problem.

Injecting is counter productive.

As long as it's in the fridge it'll be ok... I used to inject until I started cooking hot-n-fast, unwrapped with no injection. Much better results.
