Just wanted to say Good morning. I am new here as you can tell.
Not much to say, except I am a retired short round dude that is optically and folliclly challenged (overweight, bald, and need glasses:mrgreen::loco: .

I love to cook and eat, especially BBQ ribs :grin:. I am still learning how to master my Brinkman smoker. It one of the heavy gauge steel ones with the side firebox. I tend to over smoke things per the family and simetimes things are a bit bitter, so I hope to find some good tips to improve my Q.

I don't know if anyone here is from the Peoria Illinois area :thumb:, But I would love to recreate "Big Johns" sauce and ribs. I grew up on that Q, its too bad his art was lost after his passing many many years ago.

I had a Brinkmann like you speak of... Go rid of it long before I found this place, should have probably kept it.:doh:
You are in the right place to learn how to run that beast. Just remember, "sweet blue".

BTW what is " Sweet Blue"? Trying to learn as much as possible.

Welcome to the forum Keith! Sweet blue is the thin blue smoke you want from your smoker, not billowing white.
