I'm also thinking Molé, could be wrong, but it sure has the look of it.

Not a mole. I used dark chocolate, so not exactly a sweet chocolate either.

Momma always tole me Son take a bite before you say you don't like it since I like both components I'd sure try that and I probably will. After all Chocolate covered bacon is like BBQ crack IMO. But I would need to add a little chipolte powder or sea salt to the top

I'm on my way up to Palo Alto, be there in bout an hour!
I was craving some chocolate today.
How did it turn out? I did not see where you commented on the taste. I would try it, for sure. I remember going to church "dinner on the grounds" as a kid. It was the only time that I could choose for myself exactly what I wanted to eat. That is also when I found out that I loved chocolate cake and southern fried chicken in the same bite :icon_smile_tongue:. Southern fried chicken and "nanner puddin" was a very close second, though :-D.
You're missing the whipped cream.

This will be on the menu of some NY restaurant next month for $85.00 per plate!
Not for me, but some may like it.

I like both of them, but the two together is just like......well.....sorta......like a fat man wearing spandex! Yes it works(they stretch/you can pour chocolate on anything) but it is on that list of "Just shouldn't happen"!

So I guess CA is not only the land of fruits and nuts, but the land of fruit and nuts and chocolate covered spare ribs. :loco:
Just not seeing it but hey, that's what makes this place interesting!!!
So, how was it? Would you do it again?

Oh, and I would try it at least once!

My first thought was .....notta chance! But I have to say, there are those that cook their ribs in all the butter, brown sugar and cider thing.......to sweet and "carmally" for my taste tho. So I'd probably give it a taste anyway, just not to big on a real sweet profile for me, my preference is a hint of sweet with a more savory profile. But there are all sorts of tastes....variety makes the world go 'round.

I would definitely do the ribs again, the pulled pork didn't work out quite as well. The chocolate to pulled pork ratio wasn't very good.

Molé sauce, which uses unsweetened dark chocolate as an ingredient in a complex, spicey mexican curry like sauce, works well with chicken. I bet it would do the same with pulled chunks of pork.
Here is one example recipe.

I know mole would be excellent because its very complex but I'm not to sure about all chocolate. But hey I would taste it, might work.

Reminds me of a Kitchen Nightmares episode where a chef was putting chocolate on prawns... and he wondered why his restaurant was failing.
Personally I wouldn't be into ribs smothered in chocolate as I like my BBQ to taste like BBQ, but hey whatever makes yer boat float! You might wanna have your cardiologist on speed dial though...:-P
