I just got a pretty good deal on fresh cut apple and pear wood. I split some of it into smaller pieces and sat it outside hoping it would dry pretty fast. Usually how long will I have to wait before I can smoke with it? Some other apple that I got last month, looks like it is drying good. The color is getting a little darker and its starting to get little splits in it.

fruit should be good to go fresh cut... just use less of it than you would dry wood.. 3 months go for it like you would with dry wood..

I have used fresh cut apple pieces for smoke flavor on butts and chicken. The peach should also be good to use right away, also.

Does bark on the wood need to be removed for smoking?
