On father’s day my dad brought over a pack of Hebrew National Knockwurst. I hadn’t had one in years & really enjoyed it, so I hot smoked a few more for a pizza topping:

Added to the top of a standard batch of dough topped with mozzarella along with caramelized onions, that’s it:

Yup, Maine White Cedar to be specific. Someone gave me a few bags of it a while ago & I've been using it a lot, most often with chicken. Here's a shot of it in action, one chunk burried & two out there in the open. It's really nice stuff, light as a feather it catches fire almost immediately & is ready for food very fast - gives great flavor:

Conventional wisdom says to avoid cedar for smoke. Perhaps western red cedar is what they are talking about.

I gotta say though, you are the first person I have ever heard of that uses cedar for anything but planking salmon.
