Has anybody done a beef roast like chuck or english (not brisket) on a uds? Any tips would be greatly appriciated.

Not on a UDS, but I do chuck roasts in my smoker for pulled beef sandwiches.
I set the smoker for 250 .....
for pulled beef take internal temperature to 190, then foil (or pan) with a little beef broth until 205 - 210
for sliced beef take internal temperature to 170, then foil (or pan) with a little beef broth until 180 - 185
serve with some fresh sauteed green beans and roasted baby potatoes...
Use a hearty wood like hickory to compliment the beef......

Use the site-specific Google search near the bottom of the page and you'll find enough threads on chuck roasts to leep you reading for days!
When I want pulled beef a nice chuck is my go to meat. I like to get one that is at least 5 lbs and season it with Plowboys BBQ Bovine Bold or a nice Fajita seasoning and cook it until it is probe tender.

Chuckies on a UDS are awesome. Use the search bar at the bottom, some good recipes.

I only do Pepper Stout Beef Chucky on my UDS. Since I have not been able to get the stout for recipe, I use Dr. Pepper. Do a search down below, it's a great recipe.

I do mine on the WSM. No real difference. They come out great!
