Thanks Bob, You saw the cook the other night. Cold, thin sliced like Roast Beef?

Funny you should post this. We're taking a good sized piece of cold Tri-Tip, and slicing super thin with our deli slicer for Hot French Dip sammies on crusty french bread.

What he said. I toast up some French sandwich rolls, slather with garlic butter, some horseradish sauce, then thin sliced tri-tip, cold or hot, does not matter. Best roast beef sandwich you can have.

Here's how I like to use leftover tri-Tip. Flat Bread with a layer of Tri-Tip, Greek yogurt dip, cucumber, red onion, red bell pepper & tomato.

Cut it up into slices and make some carne asada tacos with it. Or just eat it cold. It's just so dang tasty I don't even always have enough patience to make anything with the leftovers.

^^ This. Did ours with the horseradish sauce on sourdough. Really was the best roast beef sandwich ever!

Fry it up for breakfast with some bacon and eggs, and fried tomatoes and baked beans and lots of sauce and onions... and a hash brown or 3.

Restaurant Depot has them most of the time. They come in a cryovac pack with 4 or 5 tri-tips in it. I break it up and vac-u-suck them individually and freeze them for later use.

Guess I need to do the KCBBQ thing so I can go to Restaurant Depot.

Tri-Tip is actually one of the preferred meats by the chili cooks but personally I would do some cheesesteak samichs! Maybe grill up some onions, peppers and shrooms to go on them along with some smoked provolone?!?
