After reading about the Ruben fatty on here awhile ago, I finally decided to give it a shot.

I used a pound of sausage and a pound of ground beef, I added a little cure to it to keep the red corned beef color. I then layered on sauerkraut and Swiss cheese and rolled it up and wrapped it in a bacon weave. I rested it a day in the fridge to let the cure do it's thing.

I hit it with some lemon pepper seasoning and plopped it on the smoker. After 3 hours at 250 I pulled it off and rested 10 minutes. It was amazing.
