View Full Version : My first over night cook in my UDS

I have had 2 drum smokers over the last couple years but never have I done an overnight smoke.

In my drum smoker at the moment I have a 7lb pork butt which I put in at around 10pm, I have stabilized the temperature at 215-230 which a low temp alarm on my et-72 of 200 and high of 300.

I normally cook my butts at 240 - 300 but this time decided to do something different.

I just hope I can sleep; gonna be some good eating for our picnic tomorrow.

I do overnights on my Large Egg Set at 225 Put it on 12A Get up 6A Works great Looking forward to more Pics

Looks great! I finished my first overnight a couple of weeks ago: it's a great feeling.

8:43am and still going strong.

I got up at 5:30 because the grill temp was going up quickly; took a few mins to stabilize at 300-307 which is where it has been for the last 3 hours.

Currently internal temp is 192 so not long left I hope.

I do overnight cooks on my uds but I cheat and use my Pitmaster. Put them on between 225-250 and bump it up to 275 when I wake. Never was able to sleep well knowing i had meat in the smoker til now.

FINALLY it finished; internal temp of 201 13 hours later lol....

next time I will be starting cooking around 8pm so it is done earlier.

Sure looks good. Did you notice any taste or texture differences from your normal higher heat smokes?

I do not notice any real difference in taste from cooking it faster; maybe a little less dry?

I have it in the fridge right now cooling down for a BBQ dinner at a friends house later tonight.

Oh yeah there is a crapload of fuel left over; I loaded that sucker up.

I closed all the valves after the pork was cooked and went away for a few hours; came home to the smell of BBQ; I thought it was the people next door but apparently my the lid to my smoker came off a tad in the wind and cranked back up.

So from 9:30 last night to until it is cool which gawd knows how long that is, around 215+ for 18 hours+ and still tons of charcoal left in the que, I love my smoker!

Yeah overnight cooks are much more comfortable using my PartyQ on my UDS.

Looks great!
