First time using my Maverick. What a education on temp loss when you open and peek or add a new meat! Never realized how long to recovery time is!

This is why many people preach leaving the cooker closed as much as possible. I normally won't peek for the first 3 hours of any long cook. Less meaty ribs are typically done perfect at that point without all the dinking around with foil, spritz, mop, etc.

You also might note how quickly a UDS can get really hot if you don't shui the intake vents for a few minutes before you take the lid off. You will also see that you need to get that lid back on ASAP.
