Guys and gals at work have been clamouring for a cookout for a while, and we have 2 guys from texas that are lamenting our areas lack of good brisket anywhere. So i decided to do a cook. based on my planning my goal was to throw the brisket on around 11 at night and let it go until i woke up...with all the alarms set for temps and such....throw them in a cooler and serve at lunch time.

WELL....4 am rolls around, alarm goes off. dropped under 225..i had intentions of taking care of any issue in the middle of the night. but sleepy hnd decided instead to just turn to the oven and went back to sleep. woke at 8, where they are at 185....so into the cooler and off to work. cranked the ole gasser we have at work and let them finish in there until they were probing easy.....was somewhat worried but they came out ridiculously good. not as much smoke as i'd of liked but whatever

yeah....they were skeptical but were def satisfied. i'll be doing one for one of thems freezer the next time i smoke anything.

as for the cutting board...i forgot mine so i found the next best thing...shipping guy wasn't too happy until he got a plate.
