My neighbor can get meat but by the case only and I have no freezer space. I wanted to do corned and a brisket side by side they come two in a case so four it is.

I soaked them for two days and changed water 5 or 6 times according to the brethren it should be just fine.

The briskets got s,p,gp the wet stuff in the grill pic is something my buddys wife calls habanero mustard. The cb's got gp+p. Fire ran 250-275, foiled @ 160, used my thermometer to probe and magically they all probed tender @ 200. The small one took 7 hours, the biggest one almost 10. Made beans in the dutch oven, I'll do it every time it's easy and delicious.
