I started with an original BDS, then moved onto a 18" WSM and then Backwoods Chubby...smoked food and I were having some issues so I got rid of most of my stuff. Well, I couldn't take it any longer and scored a NEW 22" WSM for $250 :mrgreen: Can't wait to get it seasoned this weekend!!

There is no point in firing the WSM up without some food in it. For my first cook in my 22 I did 3 8 lb chickens and a 20 lb turkey. (Note: 4 8 lb chickens will not fit on one grate. :doh: A single 8 lb bird is a perfect fit in the mini. )

That's but one way to 'season' a WSM. Poultry is nice because you can just foil the pan, leave two bottom vents wide open and let 'er rip!
