Did my first brisket this last weekend. Started at 5 AM Sunday. Smoker was up to temp at about 6. I prepped the 12.6 lb packer while it was getting to temp. It was a calm day, 45F, with some minor gusts. I put the brisket on around 6:10. I used mesquite lump for the initial burn and only added white oak and pear the rest of the cook. Temp fluxuated between 285 and 305

The brisket looks excellent. That last photo of the chopped / pulled brisket looks especially moist and delicious. Making me hungry . . . .
