All of the talk of Corned Beef and Pastrami, made me hungry. I have a really good Corned Beef Recipe that I have been using for years.

That recipe sadly was lost in a harddrive crash, and the paper copies lost in course of 5 cross country moves. That is until one day a friend I had given it too finally found his copy.

I started out By curing my own Corned Beef, my wife has never tried Good Corned Beef. Had to fix that problem. But my main goal was Pastrami, something that would be a first for me.


The Pastrami Rubbed with the spices and ready to go back in the fridge for a couple of days, but I grew hungry so it stayed in there for about 36 hours total.


Comming up to room temp as the smoker heats up. Already it smells terrific...


Smoked with a mix of Hickory and bit of Apple And Cherry. I have seen a wide range of temps to cook to, ranging from 150 to 220, I went 190 since I may not be able to do the steam reheat.

I started with my Steak Seasoning blend, and added Coriander and Onion powder and touched it up with some more course Black Pepper.

Good looking pastrami, you should probably share that recipe in case you lose it again, that way we'll be able to help you out. :)
