View Full Version : Smokin' at work on the new WSM.

So I couldn't wait until the weekend to fire up my new to me WSM. So far she's holding pretty steady at 250* with the top vent open all the way and two bottom vents closed and one all the way open.

Scratch that, she's creeping up over 275* now, I closed down the last lower vent a little bit. I'm also just running it with a dry foiled water pan.

Good to see you didn't waste any time!

Ribs are looking good!

Not sure if it's the camera angle, but one of your legs looks like it's cattywampus. Might want to check all three. Whenever I score a CL WSM I pull the legs off, make sure their not bent and re-install with new hardware. Same with the grate brackets.

I fired my new 22 1/2 up last weekend and may do a work cook next week. Ribs are lookin good !

Pulled them a little while ago, I would say probably 4 hours, I wrapped them which I don't normally do, but I was getting impatient, I got a customer and they spent a little too much time in foil.

Overall, I'm happy with the first cook on this thing. Not happy with the picture quality of my work camera. This is the only useable shot I got.

Oh yeah, I smoked them over KB and some cherry chunks. Rubbed one with Slap Yo Daddy and one with 3 Beer Rub.

Normally I would say I wouldn't trade working in the field for anything but seeing you guys Q'in at work makes me wish I could be in the office once in a while!

SWMBO takes the 'Q I smoke to work for lunch and drives her co-workers nuts when she heats it up in the microwave. They can all tell when she's having lunch. :biggrin1: I think you've taken that to new heights. Did you have to share when they were done?
