View Full Version : Pulled the trigger and bought a food shack

Been thinking of buying a coffee hut or similar and converting to a food shack for a while now. But always priced just high enough I could turn away and keep looking till now. I just became the owner of a 10' x 20' food shack. It used to be a Taco Stand but will become a BBQ stand. It needs alot of TLC but the bones are good and equipment is all working :) Got the Shack dug out of snow, it new location dug out and leveled, Now just need to move it. Thought I would start a thread on my Journey.

Thats exactly what I was thinking when I looked at it... some TLC fresh coat of paint alot of elbow grease and I'll get there.

Yes I have to move it, got plywood over windows and the 2x6's on the back and side in an X pattern to make it more ridged. Waiting on the tow company to come grab it on a rollback and then set. The original Taco Paco ran year round, I have smoked every weekend year round so planing on year round :) As long as I'm covering cost I will be open.

You can't beat those little stands like that. Most of the time they have the best food you can get. I'm sure you will. Good luck! We call those around here little hole in the wall joints...yours might look a little more appealing than most of the ones I've ate at though!

Actually, Santa Claus House is just south of North Pole on the AK highway, if I remember my geography correctly from living nearby 30 years ago.
There were no good places to stop between Delta Junction and Fairbanks back then except for the Elf's Den (pizza). In fact, there were no places back then for a quick stop.

Man, if you could hook up with any of the tour bus traffic (thinking there must be some) you could hit the ground running and know when your "rush hour" would be and how big!

Well, looking into our trip now. I think I might come up a few days early with the girlfriend but we would probably fly into Anchorage since it is cheaper. Will have to see if we can make it up to the North Pole.

Well spent all afternoon working with a tow truck, Got it moved and in position!! cleaned the Junk off the outside and all the extra crap out of the insides. Sat will start fixing the damage from the move and cleaning it!!

spent 8 hrs workin in the lovely spring weather -3F but got alot accomplished. Inside got a real good cleaning. Ready to be painted with Kilz. Outside got lot of work as well.... pulled about a 1000 brad nails that were popping out. Screwed all the T1-11 siding that was popping out. Replaced some damage T1-11, installed 2 new floor joists(damaged during the move). Electrician came out looked at everything said I was in pretty good shape just some minor stuff he'll work on for me.

It was so cold all the cleaning products so ran 2 big time heaters 175k BTU's(350k BTU total) to get the Shack warm enough then one to keep it warm

Right now with my Ready heater's (Diesel fired) looking at either propane or electric... leaning to propane.. but at -40f in the winter propane is almost a no go... so still thinking

Those temperatures are hard for me to imagine. I think it gets cold here in MA and to you 0 is probably a decent winter day! Propane would be tough at those temps. I'm shivering just thinking about it. :mrgreen: What kind of an area is the shack located in? Are you downtown, or in an industrial area? I just know that the population is sparse compared to the area I'm in.

Located at the back gate to the Army base, along side the main road from a suburban area that ties to the only way into town. Also alot of construction companies based close by. Best part only food place for 10-15miles is a Thai shack that's nick named the Thai surprise cause you may order x but end up with Z when you get home lol

I have seen propane tank heaters for cold weather work.

This is awesome. I'd love to do this, but just don't have the guts to pull the trigger. You Sir, are inspiring. Best wishes and prayers are headed your way.

One idea for heating, since you'll have electricity, would be to use the rolled up in-floor heating materials. The benefits would be that it keeps your feet warm first. And if you're like me.....you're finished if your feet are frozen.
The other benefit is that heat rises, so a heated floor is the best place as opposed to a vent on the roof.

Not yet but been busting my a$$ on it got the insides looking a whole ton better looking. Tested all the remaining equipment it all works! got the water tanks on order, waiting to here back from local power company, propane company doing a site inspection on the 16th and got insurance on it. Been a productive week and lots of $$$ out the door lol

2 coats of Killz primer and one coat of a gloss paint, FRP still needs to go on then the walls are done and ready for inspection. Shelves need cleaned then they will go back up as well.

4152 miles and two days 23 hours drive time from Beaumont Texas to North Pole Alaska.

3,593 mi, 64 hours for me.
Although it looks like a pretty straight line from STL to there. :clap2:

How are you going to do the water set up? If I remember correctly you said earlier that you had to be self contained for water and waste water. I'm guessing the tanks have to be inside so they don't freeze?

Got two tanks on order the grey water is 101 gals the fresh 85gal. Then an on demand pump. Then will have 2 more tanks in bed of pickup same basic setup. so I top of fresh water and empty grey every night. Not the easiest but no city water and sewer.

Going to start with a fleet of UDS I have 3 and will build another one if needed. I also working on getting either a Pitmaker Vault or have Rockin W (user on the forums) make me a cabinet smoker

Will freezing also be an issue for the freshwater refill tank in your pickup or will you fill it later in the day so freezing won't be an issue? I'm assuming that sooner or later you must a few months of weather with non freezing temps! Any idea on when you will be opening?

freezing is a huge concern, and yea were just now getting out of freezing weather lol. the tanks are easy to move around empty there about 70lbs. So if I need I can pull them out... But truck will be in the garage most of the time. We have a lot of coffee huts and there all self contained, I'm just expanding on there idea.

But your right the truck tanks won't have water in them very long.. just long enough to put freshin take grey out. Then dump grey. so ~1hr of water in pickup tanks

Past week or so been doing the behind the scene's stuff... insurance, securing charcoal and wood supplies, propane agreements ect...ect... my garage is full of supplies that our going in to the shack this weekend... so look for major pic updates when I get it all installed. The mound of paper work that has to be done is amazing! O and June 1st is my planed opening date

I saw on your April 1st post you were trying to find a cost effective beans recipe. Ever though about using the pork butts you smoke that are leftover from the previous day to make your beans? Chopped into cubes and chunked in there to simmer with them? Great way to repurpose unsold meat and add a lot of flavor to them baked beans. But your Q is probably so good that there ain't gonna be no leftovers!

Spent another 8 hrs got a ton done and alot of stuff put back in, still didn't get it all done but pretty close to it all done.

The FRP back board is installed, then flat top, the vents and shelves.

Another Sat another update. Got the drying racks installed, cleaned the warming table, the ring burner, Propane installed, and banner hung up. Once the tools were load up and the counters clean broke out the groceries start making some Smashburgers on the flat top. Got to say I love the flat top... I need one of those at my house!!

A DOT #420 lb tank should last me 6mths before needing a refill

That is the plan, think it will depend on if I can keep enough customers thru the winter more then anything. I know I can keep the building warm and I've cooked at -50f so that's not an issue... just need the customers. So you may have to fly up a few time during the winter to help my numbers up :becky:

Um, yeah...about that....no promises. Hell, some airlines suspend their flights to Fairbanks in the winter. Pretty sure Frontier only flies there from like March to September.

Also, let me (us) know if you need any other decor. Being down here in BBQ country, there is plenty of crap that can be found that may not be as readily available up there.

Okay 13 days till opening!! I'm getting excited and the sleepless nights area already starting.... we just had snow on the ground :( not a good sign. I'm not wanting to open in the snow. So this week I got alot of little things done.

Picked up alot of opening day supply's and cold storage supplies.

And went thru the fresh water plumbing with a fine tooth comb.... Had to replace some copper tubing and adjust some plumbing routing. But its all done and ready for the tank install. This is what happens when you leave water in the line during the winter storage. (splits I cut out and patched)

Love to have a Bama plate don't have one of those yet! Yes steak fries I not a fan of the skinny ones and think most like the bigger fries. I'm doing a Sugar/Mayo and Vinegar Slaw. Its fantastic, even people that not a fan of slaw say it great!

I've tried a Wampus beans, started off with it as a base and grew into what I currently use. Still taste great but way more cost effective, I re-purpose the PP in it, so I have less loss.

I have a gal of Blue hogs i use at comps but can't get it local so its all shipped from the states :(

Been a busy and long week! Got my Tanks finally!! So it was go time. As with anything its always the surprises that comes up that make it interesting... my fresh water tank was 17" :shocked: I was sent the wrong one it was supposed to be 14" tall. Don't have time to wait for the correct one, it took 2 mths to get theses up here. So just have to make it work. Power company still dragging there feet :mad2: Fine I'll run a Gen till you get off you rump and get me power that I paid you for 2 mths ago. I WILL open June 1st come hell or high water :clap2:

the water pump its 110v, 40psi, 4 gpm on demand pump, fast to replace and easy to get to.

Grey water drain valve. This goes outside the building and into a 5 gal bucket... that will have a 1/6hp sump pump, to pump grey water from 5 gal bucket to 110 gal cube in my pick up, via a garden hose.

Had the day that I really wanted for opening day! Not so busy everyone was stressed out and mistakes were being made. Had just enough down time between rushes wecould talk about what happen and how to improve. Had all 3 of my kids working and couldn't ask for anything more from them there were supper stars!! MY Employee was a huge success and will be great asset she rocked and picked up stuff fast!! I probaly had ~80 to 100 people sold about 150 lbs of product! Only bummer was my fridge isn't going to do it... but it came with the shack so should have guessed. going to look for a new on tomorrow.

It is a family run businesses and there getting paid... half goes to there college fund they can have the other half. I want them to have a better opportunity then me :)

thanks Tish it was a perfect day. Sunday was pretty slow but it had kinks and we learned. I still made a profit but very small due to a $110 screw up.

Another decent day covered my cost and getting thing more dialed in. I decide I need more shelves lol So sometime when I have time.. hmmm between my regular job and the shack its the one thing I don't have alot of I'm adding few or figure a way to store my bread that doesn't squash it.

Must be making an impression, we had a a local radio personality talk about the us during there morning show for 5 mins!! Or so I was told.. had about 4 phone calls on it! Very happy and excited about it. Mon and Tues are supposed to be slow days.. and I'm covering cost both those and making money.. so I'm ecstatic! food cost is under 30% and working on narrowing my waste at end of the day. This weekend I'll get the rest of the plates hung and pictures uploaded!! I can't say thank you enough all the brethern that have helped me learn!!

Had another solid day, but ran out of brisket :( I'ts been a slow seller till today and ~30lbs worth( 3 13-20lb packers) gone under 4 hrs and of course PP is a top seller... even got a repeat customer that cuz owns one of the BBQ joint in town, like mine better and is by every night so thats got to be a good thing! Also have my first Yelp review!! Thanks DUBBAGA for setting that up, You da man!!! I'm covering all my cost but not planing a trip to Tahiti yet :grin:

After 2 weeks things still going good, making a profit every day but one and it was damn close. And still haven't advertised yet... probably start lookin at it next week, to start pushin the volume up a little more :)

been run on a generator but today I got a pole installed to get a meter on a pole... still need to guy wire it and get all the hardware installed. But its a big step. Neighbor had it in his company yard and he brought the back hoe home so I was going up with the pole and figure I'll deal with the rest later lol.

Doing pretty solid not losing money!! Thats the most important thing :mrgreen: not going to Tahiti this weekend either :). I'm having fun and enjoying workin there is a nice break from my other day job!! Most my Net going right back in to it. Upgrades to make my life easier there ect... i'll work on som pic this week.

I'm smoking 4-5 butts and Briskets a day currently and may be increasing brisket before to long... my Fairbanks Cheese steaks is a hot hot seller.
