First stab at reverse engineering the incredible meat loaf at Arnold's Country Kitchen here in Nashville. It's well seasoned, smokey and has nice little bits of veggies throughout.

The diced veggies were lightly sauteed, seasoned, and mixed with the meat

I pan fried a sample to test the seasoning

Nice meatloaf, that is how my mom did hers, with chunks of veggies and a loose texture.

Nice, that looks awesome. Meatloaf is becoming one of my favorite things to smoke. I like the addition of the zuccs.

You know, I have to say it was pretty close. A little brown gravy wouldn't have hurt. I'm glad I took notes so I can take another stab at it. I should probably head back to Arnold's for another taste. And while I'm there I could get some jalapeno cheese grits, maybe some turnip greens, and a slice of spicy chocolate pie. All in the name of research you understand. :wink:

The zuccs worked out well. I'll definitely use them again. Good flavor and I think they contribute to the juiciness.

I don't care what others say - pork, beef, turkey etc it is a FATTY. Looks great.

When I smoke we nearly always do a couple of pans of meatloaf.
It's that good.
I like to baste mine with Sweet Baby Rays cut with Coffee. Different taste.

I've never heard of smoke meatloaf before but dang that looks good. Question so how did you smoke it. Did you put it on a pan or did you just form a loaf and stick on the grates? How long did you cook it and what temp?

Since I was just cooking the meatloaf and grilling the veggies I did it on the kettle. I did it offset at about 350. It was about 2.5 lbs and it cooked for about 45 minutes. Meat loaf, in my experience tends to wrap itself around the grill grate so I just put it on a piece of parchment. I cooked it to about 155. The veggies were grilled in a little grill pan directly over the fire. I glazed it with Night of the Living BBQ sauce which gave it a little kick.

A meatloaf done that way always beats 1 from the oven.:thumb:
